Raspberry Mojito Recipe

Is it 5pm on Friday yet? Surely happy hour is almost here because this raspberry mojito is calling to me. A great happy hour starts with a great co*cktail. And when the summer temperatures are starting to kick in, there had better be something cool and refreshing at hand to ease you into the weekend. In the past, a Fresh Strawberry Tom Collins or a Pink Grapefruit Margarita valiantly competed for my affections.

Well, now there's a new sheriff in town.

I remember drinking my first mojito like it was yesterday. My husband and I were living in New York City and some of my girlfriends came for a visit. We hopped from museum to museum, restaurant to restaurant, eventually landing at Tavern on the Green on the edge of Central Park. One of my girlfriends had just spent several months working in the Caribbean, a little more than a stone's throw from Cuba, the birthplace of the mojito. As we sat on the patio of Tavern on the Green on a steamy summer's day, she insisted that we order a round of classic co*cktails. Twist my arm!

Tart, sweet, cold and refreshing, my first sip of the mojito lived up to everything my friend claimed. Muddled mint leaves and lime wedges gave it a wonderfully fresh flavor, and the shot of the rum eased me right into relaxation mode.

So, as soon I knew my friend would be coming for a visit a few weeks ago, I knew that mojitos had to be on the menu. I took all of the classic elements of a mojito, then added a handful of fresh raspberries for a pop of color and an extra dose of summertime flavors.

Suffice to say that I've found a clear winner in the summer co*cktail category.

What is in a mojito?

  • A classic mojito recipe includes ice, limes, mint, sugar, club soda and white rum (let's not forget the rum).
  • In this recipe, I swapped out the sugar and replaced it with agave nectar. Honey would work, too.
  • To add a summertime twist, I muddled some fresh raspberries with the lime and mint. Blackberries would also be a great option. I find that the end of a wooden spoon (not the spoon part) does the trick.

Ingredients

  • 16 mint leaves
  • ¾ lime cut into 6 wedges
  • 16 raspberries
  • 4 teaspoons agave nectar or honey
  • ice
  • 3 ounces white rum
  • soda water

Instructions

  • Divide the mint leaves and lime wedges between two tall glasses. Muddle with the end of a wooden spoon to release the juice from the limes and the oils from the mint leaves.

  • Add 8 raspberries and 2 teaspoons agave nectar or honey to each glass, and muddle again to combine.

  • Full the glasses with ice, pour 1 ½ ounces of rum into each glass. Fill to the top with soda water.

  • Stir to combine. Serve.
