Let’s do this! Here are the ingredients to make slumgullion:

  • 1 tablespoon oil
  • 1 cup onion, chopped (about one small onion)
  • 1 lb ground beef (454 grams; lean ground beef or 80/20 for richer flavor)
  • 2 cloves garlic, minced
  • 1½ cups marinara sauce (12 fl oz)
  • 1 cup canned diced tomato (8 fl oz)
  • 1½ tablespoons concentrated tomato paste
  • 1 tablespoon soy sauce
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • 6 ounces dry elbow macaroni (170 grams)
  • Grated Parmesan cheese and fresh basil for topping (optional)

This is how my family has been making slumgullion for decades. I love that the canned tomato, tomato paste, and tomato sauce give the perfect goulash thickness plus bigger tomato pieces.

That said, every family makes goulash a little differently. For example, you can make slumgullion with tomato soup in place of the spaghetti sauce. Or add a little beef broth or chicken broth if you like a thin goulash.

Another idea is to make slumgullion with rice instead of macaroni. You could also add a cheddar cheese topping in place of (or in addition to) the Parm. Here are some other things to put in slumgullion:

  • Corn
  • Ground sausage
