How to Cook the Chicken Bites

The method to cook chicken bites is super simple:

First, arrange diced chicken pieces in a baking dish then season with the spice mix. Speckle the chicken with the diced butter.

Put in a hot oven at 420ºF (220ºC) for 15-20 minutes until chicken is cooked through. You might want to crisp up the edge by broiling the chicken bites for the last two minutes of baking time. Easy!

Directions

1. To make the oven-baked chicken bites: Preheat your oven to 420°F (220ºC) conventional. Cut chicken into 1-inch cubes.

2. In a small bowl, combine all seasonings (salt, pepper, paprika, cayenne pepper, garlic powder, onion powder, chicken stock, and Italian seasoning). Arrange chicken in a baking dish and sprinkle with the seasoning mix. Drizzle a tablespoon olive oil and toss chicken cubes with the seasoning to coat on all sides. Speck seasoned chicken with butter cubes.

3. Bake seasoned chicken in the preheated oven for 16-18 minutes, or until internal temperature reaches 165°F (75°C) using a meat thermometer. After 8-10 minutes, stir the chicken bites with a spoon for even baking. Once done, the chicken bites should be golden with crisp edges. For crispier chicken bites, switch to broil on high for the last 2 minutes of cooking until golden.

4. Remove the baking dish from the oven, sprinkle chicken with fresh chopped parsley, and let rest for 5 minutes before serving. Serve the oven-baked chicken bites over cauliflower rice with a good drizzle of the pan juices and a slice of lemon. Enjoy!

The oven-bakedchicken bites go very well over cauliflower rice as we did when shooting the pictures. It is also excellent over regular rice, broccoli, zucchini noodles, with a side of roasted veggies, or on top of a salad.

This baked chicken keeps well in an airtight container for 2 days in the refrigerator. Reheat gently in the microwave, in the love, or on the stove with a few drops of water to loosen the sauce. You can also freeze the baked chicken bites for up to two months.

    This is really good! I actually doubled the spices part of the recipe and put half of it on potatoes (they were peeled and cut into ¾" chunks). I put the potatoes in the oven first, for about 12-15 min while I cut up the chicken and coated it with the spice mix. Then I pulled out the potatoes, flipped and stirred them around, and added the chicken to the pan. I poured in about ⅓ cup of chicken broth at that point too... Just on a whim, because Ididn't have the bouillon granules. It was good!

    The chicken taste good but there was no sauce whatsoever and I followed the recipe exactly. I checked on it frequently to see if there was any sauce coming and there wasn't. There wasn't even a quarter of sauce. Other people have mentioned that but I don't think you responded on what to do. I was thinking probably a cup of chicken stock be the answer.

    This was delicious, tender and juicy. I put in a separate baking dish whole cherry tomatoes, cut potatoes, sliced red onion and sliced red, yellow and green peppers coated in olive oil and a teaspoon of the chicken seasoning to go alongside the chicken. Yummy!

    Please don't broil chicken bites in a glass dish. The dish will shatter. It was horrible and messy to clean.

    This was super easy to make and delish! My fam LOVED it and this is coming from ones that are tired of eating chicken. LOL! I doubled the recipe as I had about 2 lbs of chicken breast which fit nicely in a 9x13in dish. It was Juicy and full of flavor. I did not have onion powder or cayenne pepper on hand, so I substituted for about a quarter of an onion, finely chopped and hot sauce to replace the cayenne pepper, this changed the color a little but was still quite flavorful! I will definitly make this again, however, I will reduce the salt a little, as with doubling the ingredients, it was just slightly too salty, but not extreme. I will make this with rice next time as the juices would be amazing over rice! Thanks for this recipe! =)

    5 stars becauseIt doesn’t get much easier than this! The sauce that results reminds me of escargot in France, this is how they cook those, basically, so if it can make snails taste good, you know it’s a winner! Lol.     This was easy and pretty good! I used a 9x13 baking dish which was too big for 1 lb of chicken. Next time I’ll use a 7x11 dish. We didn’t have much sauce, probably because of the dish being too big. I will likely leave out the Italian seasoning next time, as we didn’t love it, but that’s just preference.

    What great recipe! Easy, quick, and delicious. I quadrupled the recipe because I was cooking for a crowd. Used only a scant 1/2 tsp of salt as the chicken bouillon powder provided enough flavor. Glad I did that. The chicken did not come out looking as colorful as shown in the picture (even though I did put it under the broiler), but it tasted really good. I prepped it the night before and dinner was ready in less than a half hour the next day. Will definitely use this recipe again.

    definitely recommend this recipe! i would recommend: 1) don't over-do it on the olive oil, 2) cut your butter down into much smaller pieces and disperse them more amongst the chicken, and 3) don't forget to turn on the broiler for that 1-2 minutes; I have forgetten this every time but i feel like it would make a huge difference in how it turns out. I usually serve mine with red sauce and pasta.

    This recipe is very quick and very delicious. I was looking for something to make with diced chicken and not much else, one of those days, and this worked out perfectly!     I really liked the flavor. I tripled the dry ingredients as I had 3 lbs of chicken breast and 3 hungry children. Not much to put away for leftover. Will make again, for sure.     Made this twice now, both times I loved it and the kids loved it. Like others, I tossed everything (except the butter) in a bowl then added to the pan. First time, I made it with thighs I had, was great. Second, I had breasts, also great. This recipe would work great with a 1 to 1.5 lb pork loin cut into 3/4" medallions, too.

    Great recipe! I have made it twice. Paired it with cauliflower rice the first time and quinoa w/ peas and onions the second time. A hit with the family. Add a nice salad and it's a quick, nutritious dinner.
