  • Step 2. Pour white and brown sugar into the same bowl and mix thoroughly.

  • Step 3. Melt the butter, cool slightly, and pour with vanilla into a bowl of flour and oatmeal. Stir well until all ingredients are wet and sticky.

For the oatmeal crust and topping:

  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups rolled oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 3/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

For the lemon filling:

  • 1 (14 oz.) can sweetened condensed milk
  • 1 tablespoon lemon zest
  • 1/3 cup lemon juice
  • 2 large egg yolks
  • 1/2 teaspoon vanilla extract

Instructions

  • Combine flour, oatmeal, baking soda, and salt in a deep bowl. Add both types of sugar, stir. Pour in melted butter, vanilla, and stir thoroughly until all ingredients are wet.
